Pumpkin Soup

Happy Valentine's Day!!! Today I made creamy pumpkin soup for my dear husband as a V-day gift... Pumpkin is known for its subtle sweetness.. Me and my husband shared a bowl of this soup as lunch and it's just nice to fill our stomach... 

Making pumpkin soup requires a series of steps... First, you need to use a butcher's knife to hack this baby!! Took me a few careful hacking to split them in half... Then use a spoon to scrap off seeds, fibers and whatever's inside the core... 


Next slice them up into smaller pieces... Preheat the oven to 200 Celsius for 20 mins... Before you bake them, remember to lightly oil the baking tray with cooking oil..  

500grams of pumpkin is used

Bake them in the oven for 30 mins..


While waiting for pumpkin slices to softned, dice one red onion and mince a few cloves of garlic... Set them aside... When pumpkin slices are done, cool them down till it's cool enough to handle... Scoop up the flesh of pumpkin into a bowl... Lightly mashed them with a fork...


Now, bring a oil the pan and heat it up to high temperature... Throw in onion and garlic... Fry till onion is translucent...


Throw in mashed pumpkin and add 2 cups of chicken stock... Cook for 10 mins... Next, transfer the mixture into a bowl and cool it down to room temp... Then, pour them into blender to make puree... Transfer the puree into a pan and heat it up... You can add salt and pepper to taste... Add more water to get preferred consistency...


Finally pour them into a bowl, add cream and parsley for garnishing... 
And now it's done!!!

The texture of the soup is creamy and sweet... Perfect to be served as a simple lunch... It'll be better to have a few slices of garlic bread to pair with this soup...  :)
