Seafood Yogurt Curry Fettuccine

Honestly, this is my first time making something out of curry... I never really like to make curry as it has coconut milk in it... It's too heavy for my liking... Remember the previous post where I mentioned about Nestlé Natural Set Yogurt that I bought? Researched shows that plain yogurt works best with curry recipes... 

So, I dared myself to make a simple and sure-can-eat dish... Haha... Basically this dish is simple, I threw everything into a claypot and let it simmer for 15 minutes (well, except the fettuccine which was prepared separately, duh)... At the end of it, it actually turned out alright... The curry tasted really light and creamy... Enjoy!

Seafood Yogurt Curry Fettuccine recipe (serves 2)

Ingredients:
- 6 tiger prawns (deshelled and deveined)
- a box of frozen mussel of your choice
- 1 tbs of corn flour
- a dash of black pepper powder
- 1 green bell pepper, cubed
- 1 yellow bell pepper, cubed
- 4 tbs of curry powder (or add more to your liking)
- 3 tbs of Nestlé Natural Set Yogurt
- 3 cloves of minced garlic
- 3 cloves of minced shallots
- 1 tbs of cooking oil
- a pinch of salt
- 3 cups of water
- half cube of chicken stock

Steps:
- Oil the pot evenly and add minced garlic and shallots. Stir fry till golden.
- Add the cubed bell peppers and stir for 5 minutes.
- Then add prawns and mussels and stir fry for another 5 minutes.
- Add 3 cups of water and begin adding curry powder and yogurt.
- Add plain yogurt, as well as salt and pepper to taste.
- Bring everything to a boil and simmer for 15 minutes.
- While waiting for the seafood curry to cook, bring a separate pot of water to boil for fettuccine preparation.
- Cook fettuccine for 10 minutes and add a few drops of oil into the pot to prevent them from sticking. Once done, set them aside.
- To serve, add the lovely curry over the fettuccine on a plate and enjoy!
